So what's a tried-and-true? I like them covered in bacon and orange marmalade, but the wife really really hates orange marmalade.

Any ideas?

Cover them in grape jelly instead....the cheap stuff. The cheaper the better.
Aslo try this,
one pack little smokies', one jar grape jelly, one mini crock pot and tooth picks to use gettin 'em out of the crock and into your mouth.
Its a party pleaser...people will ask what you secret ingredient is.
Combine in small crock pot and let it go for an hour or so. The jelly will melt leaving you with little smokies in a 'secret sauce'.

Salt and pepper well, inside and out, as well as allspice. Roast slowly in the oven at 250-275 for a good two hours. For the last 30 mins turn the heat up to 350 and lacquer the bird with a mixture of honey and a little water (lavender honey if you can find it). Three or four times and you'll have a gorgeous glaze on top of crispy skin.

Optionally you can rub the duck all over, inside the skin as well, with hoisin sauce and some five spice powder and leave it over night to marinate. Then roast as above (no glaze this time) until skin is crispy.
