What is the attraction of a well done steak? Last night I was at a hibachi place and the couple next to me ordered their steaks well done. The chef threw the poor pieces of beautiful meat in front of me and let them cook and cook and cook. I wanted to scream in outrage.

What is the deal? How could anyone eat a steak that has been overcooked?

I have no idea. I want my steak still mooing when it hits my plate. If I have to chase it around to get a bite, that's OK, too.

I agree. My instructions to the server are always "Show it to the fire and then bring it out."

I like it very rare too. I usually tell the server "Just knock the horns off of it, and chase it across the grill!" I get very few blank looks out ot that one.

I'm in charge of the grill at the firehouse on my shift. That's another way of saying I'm low guy on the totem pole, but I digress.

My Lt. wants his well done every time. I literally throw it on the grill 15 minutes before the others, (rare). The edges come out black & almost burnt. Just how he likes it.

I always ask if he enjoyed the piece of shoe leather he just consumed.

I just don't get it.

Medium rare to rare for mine, and if you paid me a hundred bucks, I still wouldn't let A-1 get near my steak! I wouldn't even put it on meat loaf! Well maybe meat loaf, but it sure as heck ain't getting on my steak!

Steak sauce is only for unseasoned or poorly seasoned steaks!

I used to love my steaks rare. Here recently I've been enjoying them closer to medium rare. My wife loves hers burnt to a crisp. I have to put hers on 10 or 15 minutes before mine.

5 minutes on each side for medium rare. yummy.

My father-in-law likes his well-done with no pink so he used to burn them. I made one for him that was well-done but tender and juicy. He didn't think it was possible.

Medium in certain instances medium-rare (chimchuri). Nothing on it except maybe salt. If it needs anything, I'd rather not bother.

I like mine mid-rare to mid. I changed my gf from well done to mid. She would kill me, we would go out and she would order her filet mignons well done. i also asked her what the point of that was, she could never tell me. One day while we were out I gave her a piece of my mid streak and she loved it. Ever since she has stopped ordering her steak well done. She just might be a keeper after all.

The only explination I have ever gotten from someone who liked it well done was that they did not want to get sick. Some people are convinced that if you do not cook meat till it is overdone you will immediatly get food poisioning.

I used to go to a steak place that had this chart in their menu:

Our chef cooks the steaks as follows:
RARE: Cool red center
Medium Rare: warm red center
Medium: pink center
Medium well: grey center
Well done: Eat Chicken

Hit mine with the hair dryer, and I'm good to go. :eat:

If my guests want their steak well done, I let them cook it. I can't bring myself to ruin good meat.

In our Animal science class we learned that it's only the surface of Beef that you have to worry about. I prefer my steaks medium rare with maybe a little salt sometimes. Ground beef well done.

I can cook one well done with it being somewhat tender, but not juicy. Whats your secret? I'm using propain right now (I know, I know) and usually turn the heat up to sear it, then turn it down to actually cook on. It seems to help somewhat, but still doesn't come out very juicy

I understand that most of us will love medium rare because of being juicy and has better taste- I do, and I appreciate taste. But some people especially those who has taken Microbiology will take "Well done" because of health reasons. Some bacteria can survive the heat, and infections or other possible complications would be possible. But that's rare because we normally have good bacteria that counters the bad one. But some have problems with bacteria tolerance, and are only allowed to eat well-cooked foods and are not even allowed fresh fruits because it's not fully cooked.

Thus, I heard that some bacteria just like some viruses (like herpes)can stay in our body for years and will only be activated once our immune system weakens due to a lot of factors like age, other complications, etc.

By that measure, you'd have to give it a 6th degree burn before it's completely safe.

Yuuuuumm ...charcoal. It's what's for supper. :grill:
