Grades of Knife steel !

FYI: Different grades of knife steel.
Carbon, chromium, nickel content etc.
Some provide more or less sharpness vs anti-corrosion properties.

Good starting point when discussing blade steels....There are about 40 different types active in the market place currently so sorting them out is difficult.

The real trick is hitting the balance point between edge retention, corrosion resistance, toughness, machineability, and cost.
