View Full Version : Home made vegetable soup- it needs something, but what?
Made a big pot of vegetable soup Sunday, this time without any beef as I am trying to cut back on meat for heath reasons. I used potatoes, carrots, green beans, lima beans, celery, peas, cabbage, tomatoes, and corn. Tomatoe juice for the liquid. Could not find any beef base without MSG, so I added some beef stock for flavor. Seasoned with bay leaves and Worcheshire(sp?) sauce. It's not bad, but it does not have that great vegetable soup flavor. Any suggestions or comments?

"Italian spices" - a mixture of parsley, oregano (http://wiki.answers.com/Q/What_spices_are_in_the_Italian_spices#), thyme, sage, rosemary, sweet basil & marjoram
(Toss in some pearl barley, too)

OK, thanks, I'll try it.
Well it so happens that my wife had a bottle of spices in our spice cabinet labeled "Italian Seasoning". I added some to the soup and it is much improved. Much more enjoyable now. Thanks very much.
