what does that moron lawyer expect him to do? give the donated money to the court? Im sure his defense isnt working for free plus the fact he is in hiding plus probably has some sort of security....

The plaintiff's lawyer for the Martin family hopes to hamstring Zimmerman's defense, tie up his money, make him look bad, etc. - if he can cause Zimmerman to be convicted in the criminal trial, it's virtually an automatic win for him in the civil case.
I'm not sure where he thinks his money will come from, in the civil case, but his intent is pretty simple. One possibility is that any money he can tie up in Zimmerman's bond can't be used by Zimmerman and will be available for him to take in the civil suit.
Mr. Zimmerman needs living expenses too.
O'Mara said the money isn't available for use by Zimmerman or his family. My guess is that it also wouldn't be available to them then to post his bond. Clearly that would have been a better option for them than refinancing their homes to raise the $15,000.
I'm also guessing his original lawyers he had when the PayPal account was set up, had the money go into a trust to protect it from just this sort of thing.

No way of knowing that. It would be simple and not unexpected, for the money to go into a trust, which could be used for Zimmerman, but would not be "his" money.
