Title: Homemade V8 Juice

Yield: 6 Quarts

15 lb Ripe tomatoes; chopped
2 c Celery; chopped
3 lg Onions; chopped
3 Cloves garlic;
Minced/mashed
1/4 c Sugar; or to taste
2 tb Salt
3/4 ts Pepper
2 ts Prepared horseradish
1/3 c Lemon juice
Worcestershire to taste

Over medium high heat bring the vegetables to a
boil and boil gently for about 20 minutes.

In a covered blender (food processor) and a
portion at a time process until smooth. Strain and
discard pulp.

Add seasonings and bring to just under boiling if

Alternate:

8 Quarts water
4 Pounds homegrown tomatoes -- chopped
1 Bunch celery -- chopped
8 green jalapeno peppers -- chopped
1 Cup vinegar
3 bay leaves
2 Tablespoons oregano
1 Large onion -- chopped
1 head garlic -- pressed
4 tablespoons salt
4 tablespoons sugar

In a large pot, combine all ingredients except the sugar, bring to a boil, and cook at a steady boil for 2 hours.

Remove from heat and strain through a relatively fine mesh, making sure to express yourself all the liquid you can.

Discard the pulp, return the liquid to the pot, and boil for another couple of hours, or until the liquid is reduced to roughly three quarts. Add four tablespoons of sugar, remove from heat, stir, and let cool.

V-8's nasty, IMHO...must be the celery! I prefer tomato juice straight.

Like many of you, I love V-8 juice, but look at the amount of sodium in it. Holy Cow !!!! I tried the low sodium V-8. It's was awful. Yuk. :( If you are young and healthy, the sodium is probably not an issue with you. It is for many of us over 50 - overweight/high blood pressure folks.

If you think about it, you should have had a V-8.

I did, and my engrams went all haywire and stuff.

I like the V8 juice too.
There is a low sodium version, but sodium is essential for your body so drink up.

Why would you make a perfectly good and healthy vegetable drink and then dump 4 spoons of salt in it? It's like going for a walk on the beach to get some fresh air and then smoking half a pack of cigarettes. V-8 could be a healthy drink if not for all the sodium and preservatives. As is, it's barely a step above junk food.

no replacement for displacement

err, wrong thing ;)

I like V8, but sometimes I get some that have a bit of an off flavor to them, so I mainly drink the 12oz cans or bottles (yes the other sized cans taste different) of Campbells tomato juice.

1. you're right about the salt in V-8 juice. High-blood-pressure guys shouldn't drink it.

2. actually, the damn thing is quite bitter without the sugar. Try making your own without any sweetener.

2. for a very weird experience, drink a big glass of V-8 and then follow immediately with a big glass of lemon or some other very citric fruit juice. acid city.

Love V-8, especially the spicy hot.
Now that's good added to Chili (or stew or soup).

V8 tastes too much like vegetables.

Don't they make something similar with meat?

Hey, that's less than 8 vegetables.

You thought you could get away with that fraud?

Reading this old thread has made me crave a V8. If I had one in the pantry, it would be open right now. Yea, with excess sodium !!!!

That's all Brother

Love it. I drink one small can of the low sodium every day. With Texas Pete of course.
