Where do you get you're salted cured pork at and what's the very best that you even had?

I had friend that used to see his wife family in Michigan City that would bring back about 10lbs of this stuff. It was very tasteful and did wonders on my boiled Kielbasa and Cabbage. The salted porks that I'm getting noawadays are very mild and pretty much crap. Also it seems like nobody use them in the bean/soups or other meals for flavoring.

i get mine from the farmers market and it is awesome.

I buy the whole country hams from Father's Hams in Kentucky. They'll slice them and vaccuum pack it for you for an extra 10 bucks. Best country ham I've had- not too too salty. Great for flavoring vegetables, soups and sizzling and making with red eye gravy.
Their hickory smoked fresh pork sausage is awesome too.
I get them shipped up here every fall.

thanks for the information. I'll have to check them out. Lately the salted cured pork I have been getting is plain bad. (NOFLAVOR)

The fat back is pretty crappy up here in NC too:(

What you do find is so skinny. Are farmers starving pigs now?

We have switched to using country ham or hog jowls for seasoning most of the time now.

ah... the beauty of rural life :) Our fatback is still good, as well as pork rinds, and the ham doesn't taste like flavored water. :)

You'll have to come on down more south for the good stuff ;a
