Here's a quick, easy way to make some pretty decent peanut brittle in a short amount of time.
Ingredients:
1 cup sugar
1/2 cup white corn syrup
1 cup uncooked spanish peanuts
dash of salt
1 teaspoon vanilla
1 teaspoon butter
1 teaspoon baking soda
Mix the salt, sugar, peanuts and corn syrup in a microwave-safe bowl. I use a glass one, works great.
Microwave on high for 4 minutes
Stir with a wooden spoon
Microwave on high for 4 more minutes
Stir in vanilla and butter
Microwave on high for one minute
Quickly stir in the baking soda. This makes it really foamy.
Pour over a baking sheet. A teflon one works really well.
If you don't mess with the mixture, it will spread out some, and leave the final brittle with a lot of "honeycomb" in it. Wait for it to cool, break it up, and enjoy.
Great taste, and it won't break a tooth out. I end up making a number of batches every year.
