I keep hearing you are supposed to let the meat "rest" for awhile after it is removed from the heat. Is this true? How about fish and poultry, do they have to rest as well?

Lets say I'm broiling a steak and pull it out to check how well done it is. When I cut into the center of the steak it starts oozing fat puss... does this let out the flavor and such?

No, it lets out the juices. By letting them rest a few minutes, the juices "settle" back into the meat so it stays moist instead of leaking out when you cut into it.

Especially let cuts such as roasts and birds rest. I don't know about fish-I never cook those;g

Misskitty is correct. The best way is to wrap the meat after removing it from heat and then cut the meat right prior to serving or if not place it in a a warm oven and then remove right before serving.

Sounds like I should let the beef rest awhile before serving. I like the idea of wrapping it and putting it in a warm oven until serving. I can never seem to coordinate all the dishes of meal to be done at the same time.

i love when the wife makes the meat tired!!! ;f ;f

but seriously folks...yes you should let steaks, roasts, chops, turkeys, etc. rest before cutting into them. fish doesn't really have any "juices" per se, so it does not need to rest before digging in.
