View Full Version : Need a good Fried Shrimp recipe.......
I'm going to cook some fried shrimp tonight.
I'm thinking I'd like a coconut batter recipe, but I'm open to suggestions.
Beer batter, cocunut batter, dry batter, whatever you like to use....let's hear it :)
Lightly coat the shrimp with corn starch tap to knock off excess.
Use self rising flour add a beaten egg , salt and some liquid water beer or whatever.
Make like a pancake batter dip the coated shrimp into the batter then roll in flaked coconut.
Fry in hot oil til they float and turn light brown. If the oil is at 350 this will happen at about the same time.
Fry in a tall sauce pan put no more than 1/4 the hight of oil. You don't want it to foam over.
Don't add all the shrimp at once a few is better you don't what to drop the temprature too much. Drain on paper towels.
Keep them far enough from the burner that you don't set them on fire.
Dust shrimp in flour. Dip in egg mixture (1 beaten egg per 2 tablespoons milk or buttermilk) and roll in coconut mixed with Panko (Japanese breadcrumbs -- usually in the "ethnic" isle at the supermarket).
Fry in oil (325-350), drain, and season.
I'll try you recipe next time. Need to get some Panko.
