Dry Rub for Game:

3/4 cup paprika
1/4 cup ground black pepper
1/4 cup salt
1/4 cup dark brown sugar
2 Tablespoons garlic powder
2 Tablespoons onion powder
1 Tablespoon cayenne
1 Tablespoon minced dried orange zest
10 to 12 juniper berries, crushed in a mortar and
pestle or spice mill
1/2 teaspoon ground cloves

Mix the spices thoroughly in a bowl. Store the rub in
a tightly-sealed jar in the refridgerator. It keeps
indefinitely but loses potency over time.
