In a pan large enough to cook pasta.

Add water and a Tablespoon of salt.

Add one bag of frozen Kale ,a shake of Nutmeg

and bring to a boil for about five minutes.

Add a pound of Tri-color Fusilli,

the pasta that looks like springs.

Cook until done, drain.

Melt 2-3 Tablespoons of Butter in the pan and add back the pasta and Kale.

Grate about 1/2 of a cup of Romano cheese over it.

Add one Tablespoon of Pesto and stir it up

Sounds like spinach could be an alternative.

I've never tried kale. What is it like? I really enjoy tossing some fresh spinach out of the garden in with my garlic and butter sauce. Is kale comparable to spinach? I really love pesto sauce, but the wife doesn't.

Spinach or Kale or any dark green-all the same.

Nutmeg goes with them all.

I would have used Spinach but Kale was all I had in the freezer.

I liked the way it turned out.

With fresh Kale (pull of the tough stem) I like to cook it (untill tender) with cooked Bacon and canned Yellow Limas and Garlic and Celery to make Beans and Greens. Put in a shot of Vineager before serving.

With fresh Spinach I like to pick it for a breakfast omelett with a little Feta Cheese. I wilt the leaves in Olive Oil then add Eggs and Cheese.

Kale will sub for Spinach I find the frozen milder than fresh.

The amount of Pesto in the recipe adds to the flavor but does not over power it.

i prefer my greens SEPARATE from my pasta.

endive, escarole, and spinach with olive oil, garlic, oregano, basil, crushed red pepper, and salt and pepper. and then topped off with romano cheese. yummy!!!!!!
