All right, I finally broke down and bought the 1911. Got a great deal on a springer GI-parkerized ($370 shipped NIB). Any suggestions on where I start customizing? The sights will be first, then I was thinking trigger, but you guys know more than I do about these guns. Is there something that I HAVE to change right away? I had figured on spending about $350-400 on options. It will never be carried so the beveling is not neccessary. I want a rubber grip, probably the Houge finger groove. I was thinking the Wilson trigger, is that a wise choice?

Shoot it first, then make a decision on what it needs. Customizing is there to make a pistol better. You won't know WHAT needs to be better until there's some traffic down the pipe.

That said, pay attention to the grip safety. If it's biting your hand in the webbing, then a beavertail is probably your first item. That way, you can keep shooting.

If there are any feeding issues, consider new mags before anything else.

Pay attention to the slide during cycling. Is it slamming home? If so, then some new springs might be needed.

Feel the trigger. After you take up any slack, is there any movement before the hammer drops? If so, then you might want to look at a trigger job to get rid of the creep.
