Why is it when I hard boil and then cold-water cool eggs, sometimes the shell slides right off in a few pieces when I crack it, and other times it sticks to the egg white like glue, coming off in a million tiny pieces?

My wife is Russian. She knows these things. She says when it does not peel easily it is because the eggs are too fresh. We have chickens and boil eggs only after they are a few days old. I hope she is correct.

Yep, that is it. I try to keep an extra dozen eggs on hand so I always have some a few days old to boil ;)

I got an eggstractor like the one on TV at Target. It works just like it shows and makes peeling effortless.
When I used to peel eggs, half of them looked like they went through a war.

My girlfriend and I were just talking about this the other night. The last couple of times we boiled eggs for a saled and tried to peel them the eggs didn't look like eggs. Wait until I tell her that we have to let the eggs sit out in the sun for three days before we can boil them!!;f
