My Springfield 1911 GI has a rather large gap between the rear of the slide and the rear of the ejector. Is this normal? Would this be acceptable to you?
NO!!!!!! It would not be acceptable to me.

I don't see a problem as long as everything runs the way it's supposed to, but the 1911 gurus around here might know of some potential problems I don't.

One potential problem is that the ejector is rubbing against the hammer. That might loosen it over time, and if it tilts a little more into the hammer, the hammer can strike it, causing a misfire, or shearing off the ejector into the pistol, causing all sorts of damage inside, and possibly presenting a dangerous situation to you. Look on the left side of the hammer and see if it's got a line on it from rubbing againt the ejector. If so, I'd send it back the Springfield. Heck, either way I'd send it back. Your hard-earned money deserves a pistol that's correct.
Get it fixed for years no-worry shooting.

dID YOU EVER LOOK AT A GUN LIKE YOUR IN A GUNSHOP?
I'd send it back to Springfield. The gap isn't so much the problem. The problem is that the ejector was mounted crooked and as mentioned, it appears it could rub on the hammer. This will eventually lead to it breaking.
