Howdy!
I'm curious if there is an easy way to save a whole website for offline use, without having to go into the html files and chang where the links in the pages point.

What you want is an Offline Browser. There are plenty to choose from here (http://www.download.com/Offline-Browsers/3150-2377_4-0.html). Hope this helps. :)
My favorite offline browser is wget (http://www.gnu.org/software/wget/wget.html).
Not terribly inexpensive but if you buy the full version of adobe acrobat you can save a web page as a PDF file, you can go as many links deep as you want. It 'clicks' just like you were online. Makes a pretty decent sized file, but its very user friendly file
