Is there any difference in the stock rear plate and the orange armorers plate other than the legs that stick down? Can I just dremmel off the legs of the factory plate and make my own armorers plate?
The armorers one is designed to check the engagement of the trigger cruciform with the firing pin. Why not just pick up one of the orange inspection plates instead of cutting one down and maybe screwing something up.

I was just wondering because I have an extra plate sitting right here in front of me and I wouldnt have to wait a week and spend $10 to get an orange one.

I did the same thing you are thinking of. I took a stock plate and ground it down with my belt sander. Stop just short of the metal insert. It will work fine.
