Hey, I just got a G19 and I want to keep it forever
What parts should one keep around that are most likely to
break or wear out?

The "basics": Recoil spring assembly and maybe some mag springs. (preventative maintenance only).
Also, it depends how often and how far you tear into it...

Springs are what usually fail in Glock's with the Trigger spring being the most critical of all.

I would agree on the spare springs, and would also suggest a few new mag followers, one spare mag catch & probably 2 spare extractors.
A spare striker and a set of spring cups should also be included, the cups don't break, but they are easy enough to lose during a detail strip & re-assemble. This should be enough to keep your Glock running for about a million rounds (no exageration).
Followers wear out & won't hold open the slide & I have chipped extractors and then the pistol might not eject reliably.
Steel sights might be an upgrade to consider as the plastic OEM can wear or break if the pistol is used from a holster.
On the mag springs, consider an upgrade to ISMI springs & most problems go away.
