The best way I have found is

Grab the stalk by the base and again higher bend the stalk and it will break at the woody (not good to eat) part

Take a large flat bottom frying pan.

Turn the fire up high.

Put 1/4 inch at the most in the pan.

Lay the stalks in and sprinkle lightly with salt (it helps to keep the green color)

Put several pats of butter on the stalks

Let cook on high until the water has reduced to a syrup like consistency.

It only takes a short time.

If you have more than one layer stir them during the cooking time

Serve the sauce left in the pan over the Asparagus.

This will give you a bright green crisp not soggy result.

That is sort of a variation of steaming them which is what I do by adding a tablespoon of water to a bowl covered in plastic in the microwave for about two or three minutes depending on how many. Salt and slather with much butter before cooking.

It helps keep them green if you have an ice water bath upon removal from the cooking pot.

Important: Remove that woody stalk first.

If you add lemon or lime do it after you remove them from the cooking pot.

y favorite way of cooking asparagus is to grill them. I coat them with olive oil, season with fresh ground black pepper and kosher salt. Cook until done. Of course I do cut the bottoms off first.

i just oven roasted some for easter and they were pretty good, prepped em the same way as you.

i cook them like nicky but i add parmesan cheese also.
the key thing to consider with asparagus is making sure that you dont ovecook it.
asparagus is also a good addition to scrambled eggs or an omelet.

In an omelet with onions, asparagus, fresh diced tomatoes, and fresh mozzarella cheese.

I almost always grill asparagus. I trim the bottoms, lightly rub a bit of olive oil on them, and season them with different mixtures of spices depending on what flavor profile we want.

Put em on the grill just a few minutes before whatever meat we are cooking is done, and they are just right as we pull off the meat.

I used to cook asparagus in a cast iron frying pan in a little olive oil and a half dozen freshly minced garlic cloves.

We received a black & decker (or some such) veggie steamer for a wedding gift, and the thing has made me lazy... but it makes perfect asparagus every time.

I marinade them in basalmic viniger, olive oil, garlic powder, salt and pepper, then grill them.
