OK, I've hit a wall in my quest for perfection in a tuna salad sandwich. Maybe someone here can help me break through that wall... Here's what I've got:

tuna salad:

albacore tuna
1 lemon
1 boiled egg (yolk extracted, white diced)
1/3 red onion, finely diced
1 stick celery, finely diced
3 tblspn fresh dill
1 tspn dijon mustard
3 tblsn mayonaise
1/3 tspn parprika
1/10 tspn cayenne
grind of pepper
pinch of salt

Mix all of the above... except first break down tuna in the lemon juice.

Take a fresh Kaiser roll, split it, then place a fresh piece of butter lettuce on it. Spoon the tuna salad on top, with some fresh pepper, and grate some sharp cheddar cheese on to it.

What more can be done?

I put some macadamia nuts in some tuna salad I made last week, it was good.

Dispense with the tuna, add more eggs and you've got a fine egg salad recipe!

Or

Forget the tuna, mix all the other stuff with the yolk you "extracted" and fill it back into the egg white. Textbook deviled egg recipe if you swap the celery for chopped pickles.

made it this way.

They spread some mayo on a roll.

Opened the case took out a hunk of fresh Tuna about 1 1/2inch thick

cooked,it put it on the roll.

From what I hear Capt Fish's is in one of the holes being dug for redevelopment

Coarsely chopped, or halved, Calamata olives mixed in 'the day before'
makes for GREAT Tuna salad...

Just go easy on adding salt to the overall recipe...
