coconut milk rice

1 cups of cocunut milk
1 cups of milk
1 pinch of salt
enought white long grain rice 1 ( cup full )
crack black pepper or white pepper.

Add the milks and bring to a rapid boil and then add the rice, and cut the heat down. Stir the rice and cook until done. Strain and drain rice and dot it with black/white pimenta ( pepper ).Mix well .

cilantro rice with eggs

1 cup of brown rice
1/8 a cup of golden wine
2 cups of water,
2 large eggs, whites removed and beaten
1 sml handfull of cilantro
1 sml onion

bring water+wine to a boil add rice, stir and cut back the heat

In sauce pan pour in eggs and salt/pepper, cook egg to done but not hard and chop medium to small.

Cilantro, pluck the leaves after washing away any dirt and chop fine. Same with onion peel and chop sml-to-fine.

When the rice is done drain, add cilantro/onion/eggs and toss to even mix it.

Serve the above with pull pork or stripped chicken/turkey ;)

Oh one more, my favorite " Korean fried rice "

1 cup of firm cook and not to soft rice
1 cup of eggs mixed and seasoned
1/2 cup of chopped bellpepper/onions
1/2 cup of peel+devein shrimp heads remove and tails discard
a few slice of flavored bacon

Grab 3 fattystrips of bacon. Fry and discard the bacon but leave the drippings.

Take a cup of firm cooked rice, veggies shrimp add the veggies, stir and then the rice and shrimp with the egg. Cook on medium heat and stir. You might want to add some water if things start to stick.

It takes some practice to getit right but it's not very hard to do. You can subsitute shrimp with chopped semi-cook pork or chicken breast that's been chopped or cubed, or if your lazy ( like me ) go get a rostisserie chicken and use parts of the breats meat off that and add it to the rice with cooking.

the above can be done in a SS sauce pan but a wok is what you really want or a ducthpot.

the rice I saw called for enough black pepper on top to make the rice black and it was topped with "browned in a frying pan" scallions.

That's cool with me.

I personally like Thai jasmine rice that's been steamed but it's more expensive than regular short grain white rice.
