I killed my first deer on my first hunting trip ever back in November and I don't really know how to cook it. My husband always wants me to dip it in a mixture of egg and milk and then in flour, salt, and pepper to fry it. I have a meatloaf recipe, but I don't own a meat grinder to try that out. I tried the recipe with ground chuck and it was pretty good. Here it is:
Deer Meatloaf
1 1/2 pounds ground veal
1 large egg
1/2 cup bread crumbs, a couple of handfuls
1 cup grated Parmigiano-Reggiano
4 to 6 sprigs fresh sage, thinly sliced
Black pepper
3 tablespoons extra-virgin olive oil
combine veal with egg, bread crumbs, 1/2 cup cheese, sage, salt, and black pepper. Form 4 (1-inch thick) oval shaped meat loaves. Heat a large nonstick skillet over medium-high heat with 2 tablespoons extra-virgin olive oil, 2 turns of the pan. Brown meatloaves 2 to 3 minutes on each side then transfer to a nonstick baking sheet and finish in the oven, 6 to 8 minutes.
My family is from Michigan and they say to cook it with TONS of onions to get the gamieness taste out of it. My husband's family is from Arkansas and they say to soak it in cold salt water. Both say to fry it though. This deer fed on corn for the most part, so it isn't gamie in the least. The property we hunt has huge corn feeders everywhere that are stocked year round. I like fried deer meat, but I'd like to try something different.
