Corn bread

Heat oven to 450

In a bowl
1 cup corn meal
1 cup flour
2 Tablespoons sugar
2 teaspoons baking powder
¼ teaspoon baking soda
¾ teaspoon salt
Sift or mix well

In to a food processor
½ to ¾ can corn, drained
2 eggs
¾ cup of sour cream or yogurt
¼ cup hot sauce (I like it warm if you don’t use less
Process smooth and add to the dry
You may need a small amount of water to make a batter rather than a clump

Stir in 4 Tablespoons of melted butter and any left over corn

Heat a cast iron fry pan on the stove top (I use the square one)
Put some oil into pan, just enough to cover bottom of the pan
Pour the batter in and spread level

Bake for 25 minutes.

dunno what it is but cornbread is a misnomer.

cup flour
cup cornmeal
one egg
milk (sour is best)
one teaspoon CALUMET baking powder
one heaping tablespoon bacon grease
Pinch salt (1/4 tsp)

Mix all but bacon grease into batter. Should be pourable, 'thick but runny'..

Heat 10 inch dry cast iron skillet @ 400F in oven, 15 minutes, INCLUDING LID. When hot, remove lid, add/ swirl the bacon grease around, to coat the skillet bottom, pour off any extra. add batter, cover with the HOT lid, return to oven.. and turn off the oven.

in 20-25 minutes remove it.

People who put sugar in cornbread are prolly commonists, or yankees mebbe. It sure ain't nuthin' you'ld want to admit to in mixed company..

the sugar is from a mid-Atlantic recipe.

Northern has more

Southern has none

Slice up some peppers of your choice--I like Serranos, add some cheese cubes, and enjoy.

And no sugar for me when I make it.

Hmmm, where's the buttermilk? And leave the sugar and flour out!
