Fall is in the air, we are thinkin a crock pot chili this week would be great. Anyone have a great recipe for a stellar crock pot chili?

I never measure anything, but ours is usually loaded with lots of meat and very little beans, as hubby hates beans. So...if you don't mind a chili recipe that's approximate:

Small can of chili beans (pinto beans in sauce) - more for flavor than anything
2 pounds of stewmeat, cut into smaller quarter-size bits, browned on all sides
2 pounds of ground hamburger (or ground pork, or if you must, turkey), browned with some salt and pepper
2 cans beef broth
2 or 3 cans of diced tomatoes in juice
2-4 TBSP flour, mixed into the juices thoroughly
Small can green chiles
4-6 cloves garlic, crushed in a press
2 whole onions, chopped small
TBSP or so of cumin
1/2 tsp or so of cayenne pepper (omit if they're not into spicy at your house)
A cup or so of your favorite salsa

If you like it sweeter, you can throw in half a cup of ketchup (some people do, I don't know why). You may have to adjust the flour to get your chili thicker.

I throw all this in the crock, cook on low all day. Everyone likes it around here. You can adjust how hot it is by adding either Tabasco or (gasp!) Pace Picante HOT sauce. I've been known to throw in leftover packets of Taco Bell sauce, etc. Some days I'll add more meat, some days less.

But I've always cooked by averages and bits and pieces, not by a rigid teaspoon here and there and such. (except in recipes where it might count, like bread or souffles)

Thanks G19G and GKL. I may try both. Just thought some of you would have some great recipes for the colder months, GKL you know the drill up here. Going to make a Guinness beef stew if you need the recipe it's easy as this;

Three tall boy cans of Guinness
three pounds of stew meat
taters
onion
celery
bag of frozen peas or mixed veggies
three bay leaves
salt and pepper
can of stewed tomatoes

Toss it all in and give it a good 24 hours slow cookin, or until the meat starts to fall apart. Take a little cream corn starch and water to thicken it up and enjoy with crusty bread. The meaty potpourri is the best part, the whole house smells like dinner. Love it.

I have one for chili but don't have it with me.

However, we made this for work and it turned out great:

Slow Cooker Chicken and Dressing

1 stick (1/2 cup) butter

2 cups chopped onion

2 cups chopped celery

1 skillet of baked cornbread, cooled and crumbled

1 1/2 tsp. salt

1 tsp. poultry seasoning

2 tsp. sage

1/2 tsp. black pepper

2 well beaten eggs

1 can of cream of chicken soup

1 can of cream of mushroom soup

1 1/2 to 2 cups chicken broth

3 cups chicken, cooked and torn into pieces

Mix butter, onion and celery into crumbled cornbread. Add seasonings, eggs and soups. Pour chicken broth over this; stir. Layer half of dressing into slow cooker coated with nonstick spray then a layer of chicken, then the other half of dressing, topping with chicken. Cook 45 minutes on high. Cut temperature to low and cook at least 4 hours.
