Texas Style hot Ranch beans
Here's a receipe for those cool winter nights when you need a good pot of pinto beans.
(serving for 4 person)
1cup of dried pintos bean
1tsp of brown sugar
1 jalapeno pepper sliced and seeded or a hand full of red-peppers beans
1/4 tsp of garlic salt
sprinkle of kosher slat
1-or-2 strips or Hormel maple bacon
few twrist of pepercorn
1/4 tsp or coriander
2 12oz Beer ( I like JW dundees Honey Ale )
Wash and soak beans over night or for at least 6-8 hrs
Fill pot with bean and add water and beer in equal quanity. Bring to a quick boil and add salt,garlic salt,sugar and coriander with bacon strip. Stir so all seasonings are mixed in the boiling water.
Turn down the heat and let the beans simmer for at least 2-3hrs or until beans are fully cook and firm enough for you taste. Ocassionly like ever 30mins to 1hr check and stir the beans.
In the last 1hr of cooking, add dice Jalapeno or red peppers beans.
You can server the whole mess over rice or eat it in a small bowl topped with fine diced red onions if you like
adding a peeled onion when you start cooking the beans.
