For those who prefer their wings hot & crispy as opposed to hot & soggy, try this cooking method:
Lay wings on aluminum foil on top of a flat cookie sheet.
Place in oven and bake at 425-450 F. for 1 hour.
Remove from oven.
Place wings in a bowl and douse with your favorite sauce. Coat all sides.
Lay wings on FRESH aliminum foil back on top of your cookie sheet.
Place wings back in the oven under the broiler for just a few minutes, and until the tops just start to turn black.
Remove from oven and serve wings topped with a sprinkling of freshley cut cilantro.
Even if you like your wings dripping in sauce, a small bowl placed on the side for dipping in at the table will still allow you to enjoy crunchy skin.
