For you landlocked sushi makers like myself...
Really fresh sushi quality fish is pretty impossible to find in my area. There's a newish product on the market by the Sea Pak Shrimp Company found in the frozen fish section, oven baked baked shrimp tempura. My favorite sushi rolls have always been the fried shrimp ones, but deep frying up shrimp just to put them in sushi rolls is a bit too much work for my lazy butt. The oven baked tempura works real well. Even tastes pretty good on its own.
