I am looking to install a gunsafe with a NAS HDD for my network to backup to. What brands on gunsafes offer Cat 5e cable access for this? Or, if no one does, what do you guys recommend?

I doubt you'll find a gun safe with networking capability.
For cable access just route it through a hole, you'll need a power cable for the drive as well. But ventilation is going to be the issue as the drive may overheat in the closed safe.

Doesn't SentrySafe Make external Hard Drives that are fire resistant? I was on their web site a few months ago and thought I saw several types of them. I also remember seeing a safe that had networking capability.
SentrySafe makes a 250gig fire/water proof(1/2hr @ 1550deg.) back up drive. It is however close to $400.00.
The draw backs to putting a regular HD in a safe could be a few. How hot will the HD get, so how much of your safe will you have to give up so that there is room around the HD and will that be enough. Routing wires into the safe. If your safe is fire/water rated putting holes to run wires through would comprimise thoes ratings.
Sentry Safe also makes safes that have USP inputs. You plug a USB cable into the port on the outside of the safe and there is a female port inside of the safe that will power up a 2.5" HD. THis would give you the ability of the HD and room to store some other things.
You ought to check out this bad boy, it got a ton of attention at CES this year http://www.hddfiresafe.com/ they "kidnapped" a few people for a demonstration. It's Fireproof to 1700°F for 1-hour and Waterproof to 30 ft. of Saltwater for 30 days for $200/1tb. They have vids showing torture tests and the construction.
You can buy a drawer for about $20 that mounts in your machine like a CD drive and holds an IDE hard drive.
Download to it and store in the safe. Or just cut a DVD once in a while.

I used to be appalled, now I'm just amused.
External HDD's would make the small area in side of a rifle safe very warm, I would be looking at how this increase in temperature could effect the storage of my firearms first.
Yes, I could manually place back-up DVDs in the safe. But, that defeats what I am trying to do. I want my backup protocol to be completely automatic.
I'm not trying to run a server in the safe. I have a small portable HDD that runs on USB. It gets all it's power from the USB cable. It doesn't generate any noticeable heat. If I had a USB pass-through in a safe, I could set-up this HDD, and my network could backup to it every night, without any attention from me.

I just have a back up drive I pull out and update from time to time. That way I keep it complete isolated.
If you are looking for real secure back up solution, I would have it isolated, not plugged into anything, when not in use. One good lightening strike, and everything wired to something is toast. I have known to happen.
Also, stay away from back-up disks, the information you "burned" on to them is only temporary. It might take 10+ years, but it will get lost eventually.
one way you can get around a gunsafe not having a cat5 port is by using a safe that has a power cord for lighting.
you can use this connection to your houses power grid as a network.
this can give you access to to the NAT with out actually connecting it to a Cat5 network.

basically you plug the Cat5 into this adapter and then pug it into any power outlet. It sends a signal threw out your homes 12-2 power wiring. Then plug the other adapter into any power plug (the one in the safe) and now you have access to your home network in your safe with out using a Cat5 network.
here is a diagram i found that shows how the network would look like
now a NAT would not produce that much heat but in a air tight environment it will build up could get hot enough to do damage. If your safe is large enough it could take a while before the temp would get critical(a day up to a few days). you could get around the heat buildup by opening the safe for a few minutes when ever it gets to hot.
Now you could look for a safe that is not fireproof that could have a vent in it. you would not need to have a large vent even something very small would be enough.
