Lemon Pepper Buttered Bass
This is one of my favorites for fish. Its the best for bass or walleye.
This is for one pound of fish:
1 pound of fish fillets
1 stick of butter per pound
Lemon Pepper seasoning
Preheat oven to 350f
Take your fillets from the store or from your catch and cut them into pieces about 1" by 1". Take a peice of aluminium foil about 20"long and lay it down on the counter. Curl up the edges on all four sides so the butter wont run out. Melt 1/4 of the stick of butter and pour it onto the foil. Then take your lemon pepper seasoning and sprinkle it on the butter until it covers about 60% of the butter. Do the same with the salt only sprinkle about 30%. Next lay the pieces of fish down evenly on the foil with butter, lemon pepper and salt. Do not double layer the fish. Take the remaining 3/4 stick of butter and melt it then pour over the fish. Sprinkle the lemon pepper and salt over the buttered fish like you did before.
Then take another peice of foil 20" long and lay it on top of the fish. Roll the two side pieces together until you get to the fish. Do the same with the ends. Then take another big piece of foil and wrap up the bundle of fish.
Next lay the bundle of fish directly on the oven rack. Bake for 20 minutes on each side. The fish will should be done by then. Open the fish up and check it. If it falls apart when you pick it up its done!! if it doesnt wrap it back up and bake until done.
All the fish will be so tender and juicy it will make your mouth water. All the flavor is kept in the foil and not baked into the air. Only mess is the dish you melted the butter in and your plate and fork.
