the sauce:
1/2 c worchestershire sauce
1/4 c sugar
1/4 c soy
1/4 c ketchup
1 T dijon mustard
1 t ground allspice
the chicken:
2 chicken breast pounded to 1/4" - 1/2" thickness
1 egg
2 T water
1 T soy
1 c of instant potato flakes
peanut oil
combine all sauce ingredients in a medium to small pan, reduce volume 50% over medium heat
combine the egg, water, and soy into a bowl and whisk well to make an egg wash, dip the chicken in the wash and then dredge the chicken in the instant potatoes
fry the chicken in peanut oil covering the bottom of a 10" skillet (cast iron seems to work best) over medium heat until browned on both sides
serve with sauce over the chicken
