k, so I don't use this on hot "wings" per se, I prefer boneless skinless chicken boobs and thighs...here goes


In a medium bowl mix the following:

two handfulls of chili powder
one handful of black pepper
cover that with a layer of granulated garlic
add a few pinches of paprika
add half a handful of brown sugar
add a half a handful of ground white pepper
add two pinches of cumin
ad half a pinch of dill weed
ad half a handful of celery seed
add a handful of sesame seeds
mix that up and set aside

in large bowl add the following:

1 bottle of your favorite KRAFT barbeque sauce
1/2 cup of Cattleman's BBQ sauce (find it at Costco)
1/4 bottle of A-1 steak sauce
1/2 cup honey
1/4 cup maple syrup
1/4 cup sweet & sour sauce
stir it all up

slowly stir in the dry ingredients above. Mix well. Take 1 can of 7-up, Sprite, or Sierra Mist. Open can. Pour in about 1/8 of the can of soda into the sauce and stir. Drink the rest of the soda yourself.

Taste the sauce. Does it burn yet? No? You haven't gotten it quite spicy enough. Add half handful of chili powder, a pinch of curry, and two more pinches of ground white pepper. mix well. Taste. Still no fire? Blend ONE habanero pepper until it can't be blended no more. Mix that in with the sauce. I've never had to go THAT far. But if it ain't hot enough with the habanero & all the spices, you really should get yourself checked out by a qualified medical practicioner.

Warning: Do NOT try this recipe if you've got tender rear nether regions that suffer from irratibility, inflamation, or extra sensitive skin. It burns both ways for the un-initiated. I sweat like a pig when munching down the super spicy chicken. I'm the only one in my family who can eat the full-house hotness stuff, and my dad loves eating spicy stuff.

Another alternate way to prepare the chicken: double the dry recipe. Dry-rub all the dry mixture on to the chicken and let it set for a few whilest you mix up the liquid portion. Place chicken on a tin-foil lined baking dish. Cover chicken in sauce. Cover that w/ more tinfoil and bake @ 425f for 20-30 minutes or until done.

The sauce as described above (or with half or 1/4 the amount of dry mix added) makes an EXCELLENT alternative to ketchup for burgers & fries.

Dogs like it too (at least my dad's little Jack Russel terrier does)

HOOTERS BUFFALO CHICKEN WINGS

Vegetable oil (for frying )
1/4 cup butter
1/3 cup Crystal Louisiana Hot Sauce
1/4 teaspoon ground pepper
1/2 teaspoon garlic powder
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/3 teaspoon cayenne pepper
1/4 teaspoon salt
10 chicken wing pieces

On the side

Bleu cheese dressing
Celery sticks

Heat oil in a deep fryer to 375 degrees F. You want just enough oil to cover the wings entirely - an inch or so deep at least.

Combine the butter, hot sauce, ground pepper and garlic powder in a small saucepan over low heat. Heat until the butter is melted and the ingredients well-blended.

Combine the flour, paprika, cayenne pepper and salt in a small bowl.

If the wings are frozen, be sure to defrost and dry them. Put the wings into a large bowl and sprinkle the flour mixture over them, coating each wing evenly. Put the wings in the refrigerator for 60 to 90 minutes. (This will help the breading to stick to the wings when fried.)

Put all the wings into the hot oil and fry them for 10 to 15 minutes or until some parts of the wings begin to turn dark brown.

Remove the wings from the oil to a paper towel to drain. But don't let them sit too long, because you want to serve the wings hot.

Quickly put the wings into a large bowl. Add the hot sauce and stir, coating all of the wings evenly. You could also use a large plastic container with a lid for this. Put all the wings inside the container, add the sauce, put on the lid, then shake. Serve with bleu cheese dressing and celery sticks on the side

I like crispy wings. The best way to do that is use thawed wings and roll them in a towel before setting them in a fryer. Some places use a light flour coating, but I do not like the taste.

The sauce, one key thing is butter.

The best wings I have had so far is from the Anchor Bar ( the first place for wings, in Buffalo) and Tonys Pizza in Akron.

Other than "real" Buffalo Wings, my ab-fab are "Rochester Wings". From Buffalo's neighbor and competitor. LOL

ROchester wings are a sweet hot sauce based on COrn syrup and hot stuff. Best served at Country Sweet Chicken and Ribs in Rochester NY. ^c

I try to bring some home with me whenever I make it up there. At the restaurant they serve the wings as a platter: Bottom is bread, then a pile of mac salad, then the wings on top, then drown it in the sauce... ;V

I actually like all wings that have a slight crunch BUT... my favorite are the ones that make me break out in sweats when I smell them;P

My favorites are a combination of those two 'qualities' above! I too like my hot wings to have a little breading (or something) coating to them - and like you said . . . . . . make me get all "hot & bothered" by the fumes coming off of 'em! ;9

Well the Rochester wings are breaded, I believe. They now make a Habenero version of the sauce for those who like it really hot!

Oddly enough, I just spotted the Country Sweet sauce in a supermarket in Nashua, NH!

A very close friend of the family just returned from the middle east with the 1/152nd Inf. We are heading to Indy the weekend after next to consume mass quantity of wings as his welcome back! ;?

Dang people im not much of a cook but you are making me want to mix up some of these wing recipes. I love wings as long as they dont turn me into the Batmobile the next morning.

Try that recipe- it's got 5 habaneors in it and it's plenty hot. I'm gonna try it on back ribs one day.

I grill mine. First, I shake plenty of Tony Chachere's seasoning and cayenne pepper on them. Then I marinate them in Crystal or other good hot sauce.

The grill crisps up the skin just the way I like it. I hate mushy/fatty dead-chicken wing-skin! The flavor of the seasoning and marinade stays with the crispy skin.

Had them for dinner tonight. Mmmmmmm!!!!
