Brie and Pecan Quesadillas
Brie, chunked
Pecans, chopped
Flour Tortillas
butter
In a skillet, brown a buttered, flour tortilla on one side. Brown a second buttered, flour tortilla on one side. Add brie and pecans to the browned side and cover with the other browned tortilla. Return to the skillet and brown both sides to melt the brie. Cut into eights and serve warm.

Make Tomatoe, Basil, and Brie ( http://glocktalk.com/showthread.php?s=&threadid=201493) and place on thinly sliced, toasted baguettes instead of pasta.

Take a block of feta cheese, and cut it into nice pretty little bite-sized cubes. Then set out toothpicks and small dishes full of "dry flavor options" such as crushed red pepper, chili powder, dried crushed herbs, mustard seeds, poppy seeds, fennel seed, celery seed, garlic powder, cumin, etc...
Guests put a toothpick into a small block of feta cheese and then dip the block of cheese into one of the dry flavors. The natural moisture in the cheese makes the flavor stick to it, and makes a yummy combo!
This is super easy and an unusual way to gather guests around the table. Anyone else have any great ideas for other dry flavor options besides the ones I listed? I'm always stumped for more.

Saute some mushrooms in butter and serve with a good Chardonay. Do it while they're present - makes their mouths water and they crave for it even more. Easy and effective.

Jack Daniels & Brie
We jokingly call this "White trash @ the Waldorf".
Jack Daniels and lite brown sugar...a cup or so of each...warm it up in the microwave...till it gets syrupy...if it's too thin add more sugar...too thick add more JD. Pour half the syrup into a baking dish and top with a slice of brie...melt it down in the oven just a bit, pour the remaining mixture over it, bake it down some more. You will have a sweet, syrupy, rich flavored sauce over a creamy and luscious brick of cheese.
Serve "fondue style" by dipping garlic bread, Texas toast, Focaccia, crackers, whatever into the mix.
