Hey Okie;
The key is to use COLD butter which has already been cut into small cubes. Work this into the flour mixture with a fork until the flour resembles small pebbles or has almost a sandy texture. Don't skimp on the butter because that is what makes the biscuit 'fluffy and soft'. Once you start to work in the buttermilk you really have to do it gently. No more than three or four turns and the dough should be ready to roll out and cut. If you overwork the dough after adding liquid the resulting biscuit will be tough and chewy. I use Hudson Cream self rising flour and eschew the baking powder and baking soda. Easier doncha' know.
Go find a bag of FROZEN Pillsbury biscuits and follow the directions on the bag.
I buy mine at Wally World. I think they are even labeled with Wally World labels as Pillsbury;g Other grocery stores carry them in the original Pillsbury packaging but they charge more.
Trust me on this! I will never make a biscuit as long as I can buy these things

Woof, Woof!
I won a Blue Ribbon at the County Fair with this one
Southern Drop Biscuits
Pre heat the oven to 500 degrees
Lightly butter or spray with pam a pan with sides-I use a round cake pan.
mix and sift together into a bowl-
2 cups of flour
2 heaping teaspoons of baking powder
1 teaspoon of salt
1 teaspoon of sugar
1/4 teaspoon of baking soda
Add either 1/4 cup of cooking oil-canola
or 1/4 cup of finely diced butter.
Either stir as you slowly pour the oil into the flour
or mix by squeezing the butter and flour together
Add 1 cup of buttermilk and mix with a spoon .
the mix will be wet.
(if you use regular milk leave out the baking powder)
Place 1/2 cup of flour in a small bowl
Take a slightly heaped tablespoonful of the dough
drop into the dry flour turn over to coat all sides
pat the excess flour off and shape at the same time
place in the pan and so on.
The biscuits should touch the sides of the pan and each other.
Place on the middle rack of the hot oven.
Turn the heat down to 475 and bake for 12 minutes.
The tops should be lightly browned.
These are easy to make and by the time the oven is hot they are ready to go in.
