In Itunes, go to ---> Edit, ----> Preferences, and go the the Ipod tab. Nothing will show unless your Ipod is plugged in, but when it is, you can change it from auto update to update manual.
I just got my 30gb video Ipod yesterday, so I have been playing around with it a bunch.

A FYI that I just learned. When you drop and drag to your IPod, make sure you get a plus sign when the IPod line highlights... This drove me crazy till I called Apple...
