My son lived in Palm Coast last year and there was a gunsmith there with his own shop. I don't remember his name but he had a nice little shop and seemed to know his stuff.

The shop was just off Old Kings Road south of Palm Coast Parkway.

I would recomend dick devitorio at east orange shooting sports in orlando. He is the favorite gunsmith of ipsc and idpa shooters throughout central florida and I know of a great many people who've had them work on kimbers and para-ordinance's. He can tune a gun "to the edge" for competition or do "carry gun" jobs.
